From Garden to Table

I discovered a secret. It's one of those secrets that, as a gardener and lover of veggies, I am ashamed to admit. Wanna know my secret? I honestly do not like raw radishes! And of course, this year, I've been growing a ton of them in my garden. I never thought that I would find something so gorgeous so unpalatable. So, how did I fix this radish debacle? Simple, I roasted them.

I love roasted veggies. Never met a roasted veggie I didn't like. It's the perfect way to handle a lot of veggies at one time. And it's great for meal planning; I always use the leftovers to create simple and fast pasta dishes later in the week. Roasted veggies, when browned on a baking sheet or pan, release their natural sugars. This results in tender and sweet veggies - yum!
So, how do I roast radishes? Let me break it down for you in easy steps.




First, wash the radishes and get your ingredients together. I like to use canola or olive oil spray, McCormick Roasted Garlic Montreal Chicken seasoning (My absolute favorite-even though it says "chicken" I use it on all my roasted veggies), salt and pepper, and a baking sheet or pan.









Next, tear off the greens and spray everything with the oil spray, coating evenly.















After that, sprinkle seasonings on the veggies.
















Next, toss veggies to incorporate seasonings.
















Place in oven at 375 degrees for 30 minutes.
*Tip - It's a good idea to separate the greens from the actual radishes, only roasting the greens for half of the time. My greens roasted for the full amount and were very dark, crisp and dehydrated. It's not a bad thing, just some folks may prefer them to be less dry.

Keep an eye on the veggies while roasting, as some ovens may vary. This was just a hand-full of radishes, so the cooking time may vary if you have more than this.




















The results: Amazingly yummy roasted radishes that taste very similar to turnips. The greens, suprisingly, tasted like popcorn! Weird, right?
